Our first recipe is from our beautiful friend, Mountain Starlight. Aka Laurie Higgins. Laurie owns her ranch in Aamarillo, TX that she has dedicated to a horse rescue.
We made a few changes to the recipe, but yes it is delicious, Laurie, and yes we want another piece! ;)
INGREDIENTS - SERVES 2
EZIKEIL BREAD - 2 PIECES
TOMATO - 1
AVOCADO - 1/2
RED ONION - AS MANY AS YOU WANT
OLIVE OIL - A COUPLE DRIZZLES
SALT
PEPPER
DIRECTIONS
Pop your bread in the toaster and heat to your prefered toastiness. Slice up half an avocado and smash with a fork (this would be a good time to add some salt, olive oil and fresh ground pepper - or not, whatever, its up to you). Slice up a tomato - we used a pretty small one so it came out to 4 slices/piece. Cut your onion horizontally or so the slices come out in pretty round circles.
Once your toast has popped, drizzle a litle more olive oil over the toast, spread the avocado, layer with tomatoes and top with red onions. Then - if you'd like - drizzel some more olive oil, sprinkle some more salt and crack some more fresh pepper over your open sandwich. Enjoy!
